Molly Abraham: Students in the culinary program at Schoolcraft College serve dinner Wednesday through Friday during their studies at the noted program. The American Harvest Restaurant is in the multimillion dollar VisTaTech Center on the north campus near Seven Mile Road. Menus change every week, typified by such dishes as spicy skate wings with shiitake mushrooms, red pepper and fennel, grilled veal chop with soft polenta, haricots vert and creamed spinach, salmon-stuffed cabbage with shrimp mousseline, fresh herbs and steamed asparagus, all with a variety of accompaniments. The array of desserts includes those prepared by the Brigade class as well as by chef Joseph Decker's pastry class, such confections as chocolate eclairs, chocolate cheesecake, and apples in puff pastry. Wine and beer are available with dinner, now prepared by former Lark chef Marcus Haight and his post-graduate Brigade class. Prix fixe menus are in the $40-$50 area with a lighter menu at $39-$49. Lunch, from an a la carte menu, is served Tues.-Fri., but not by chef Haight's class. It is the work of undergraduate students. Reservations are suggested for both lunch and dinner.
