Molly Abraham, Detroit News Restaurant Critic: Cleveland chef Michael Symon was brought in by the management of the reborn Book Cadillac to preside over a restaurant that is pretty much dedicated to meat, from dry-aged steaks and chops to a rotisseried "beast of the day," which might be a suckling pig, a goat or a baby lamb slowly revolving on the spit. The setting is a very contemporary room done up in subdued colors, with well-spaced linen-covered tables. There is also a handsome bar where patrons may order appetizers and it offers a "Cocktail Hour" on week days that includes bargain prices from 4-6 p.m.

My wife and I attended Roast on July 7th, 2009 and we can't wait to get back. We had the supremely divine sweet breads and beef cheek ravioli as starters. I wish I could eat sweetbreads every day for the rest of my life now. For our mains we shared orders the trout with almonds and the roast piglet. But the talk of the evening was spent on the most wonderful Brussels sprouts and creamy polenta every made by man. Desert was no less enthralling, my wife enjoyed her champagne and pomegranate sorbet and I gobbled my freshly baked blueberry and peach cobbler.
The service however is what sets this beautifully appointed restaurant appart. Our server had all of our needs met before we knew we even needed anything without at all being disruptive to our diner. she was also very helpful with recommendations form the giant wine and beer list. This beer list is also of note as it contains many Michigan micro-brews. Try the Jolly Pumpkin selections from Dexter; wonderful!

Michael Symon's Roast -- the flagship restaurant on street level at the Westin Book Cadillac -- is a knockout, a sophisticated, understated room with a sharp, well-trained staff (in blue jeans, an artful choice to underscore its lack of pretension) and a concise menu of well-prepared contemporary dishes.
